Fresh and Fruity Salad

  • 15g coriander
  • 4 chicken fillets
  • One lime, juiced
  • Ground pepper
  • Extra virgin olive oil
  • Two apples
  • Vitacress Formosa salad
  • 100g walnuts
  • Vitacress passion fruit seasoning


  1. Drizzle a little olive oil into a frying pan and add the chicken fillets which have been seasoned with a mixture of chopped coriander, lime juice and ground pepper.  Braise the chicken in the pan.
  2. Meanwhile, on a platter arrange the Formosa Salad and the chicken fillets cut into pieces.
  3. Decorate the platter with pieces of apple and walnut and finish with a few drops of Vitacress passion fruit seasoning.
