Tomato Salad

Serves: 04  Pre Time: 30min.  Difficulty: Easy


  • Extra virgin olive oil
  • 200g pear tomatoes
  • Sugar
  • 15g coriander
  • 60g wild rocket
  • Bread croutons
  • 1 medium-sized onion
  • Brie cheese
  • Vitacress vinaigrette seasoning


  1. Drizzle a little olive oil into a frying pan, add the pear tomatoes cut into halves, a tablespoon of sugar and all of the coriander. Let it cook until the sugar melts.
  2. Meanwhile, place wild rocket, croutons, thinly sliced onion and sliced brie cheese on a platter.
  3. When the sugar begins to have the texture of syrup, spoon the contents over the prepared platter and finish with a few drops of vinaigrette seasoning.
