Spring Bruschetta

Serves: 04  Prep Time: 30min.  Difficulty: Easy


  • 3 cloves of garlic
  • Extra-virgin olive oil
  • 15g chives
  • 15g coriander
  • 200g pear tomatoes
  • 4 slices of rustic bread
  • 50g brie cheese
  • 30g wild rocket


  1. Chop the cloves of garlic, chives and coriander and mix in a bowl with a drizzle of olive oil and the pear tomatoes cut in halves.
  2. Spread the prepared mixture over the four slices of rustic bread.
  3. Add the brie cheese and bake until it melts and the bread is toasted. Remove from the oven.
  4. Scatter the fresh wild rocket over the slices of bread and serve.
